The most Burgundian of Jeff Gaffner’s six chardonnays, this is complex in stony mineral flavors and has a slight chalky bite to the texture. Made from clones Dijon 95 and Robert Young, it’s full-bodied but has a Chablis-like intensity, freshness and slight grip that’s appetizing and palate-cleansing. Great structure and balance set it up well for further aging. Drink or hold. $75
